Here’s an intensely beautiful book that showcases amazing, plant-focused recipes, each captured in breathtaking photos. Whether you are looking for breakfast, dinner, or somewhere in-between, the authors have you covered with vegetarian and often vegan ideas that will make your mouth water. A couple of my favorites: Spicy Black Bean and Mango Stuffed Peppers, topped with a spicy jalapeno pesto; and Vegetarian Portobello Reuben Sandwiches, made with a quick Pickled Red Cabbage and a Horseradish Sauce. The recipes are complex, layering flavors in fascinating and delicious combinations – lots of spices and fresh herbs ramp up the taste, and most of the ingredients can be found pretty easily at a good supermarket – but they are not at all difficult. Some recipes do seem to try a little too hard, but it’s a small flaw, easily forgiven. Helpfully, many of the condiment and sauce recipes are included twice – not only with the first recipe using them, but also, again, in a convenient chapter of their own – because you will want to use them in lots of your dishes. This is a great book to get your own ideas flowing on how easy – and delicious! – it is to put more plants in the center of your meals.
