EatingWell magazine offers healthy options for those looking to improve their diet while still enjoying good-tasting food. This book continues that tradition with meals that can be made in one pot. “One pot” is actually a large category. “The Salad Bowl” section has main-dish recipes that feature some protein on a bed of greens; another category, Wok, uses fast, high heat for fresh, bright dishes. One-dish meals are offered for the skillet, roasting pan, casserole dish, slow cooker, and Dutch oven.

Recipes include straightforward directions, approximate cooking times, and nutrition information. These meals are not impossibly difficult, but neither are they simple. Most have a long list of ingredients, especially spices, as the purpose is to retain flavor while removing fat and calories. Preparation takes many steps, and the type is small and hard to read. The book is, not surprisingly, just like a thicker edition of the magazine, with glossy magazine pictures; these are adequate but not particularly enticing. Rather than pulling you in with dreams of delicious dishes, you feel scolded for not eating perfectly, and you are left with a feeling of duty rather than excitement. It is a comprehensive set of recipes, but not a particularly compelling book.
